Malai Kulfi Recipe
Malai Kulfi is a delicious Indian frozen dessert that is made with milk, sugar, and flavored with cardamom, saffron, and pistachios. Here's a recipe to make it at home:
Ingredients:
- 4 cups whole milk
- 1/2 cup sweetened condensed milk
- 1/2 cup heavy cream
- 1/4 cup sugar
- 1/4 teaspoon ground cardamom
- A pinch of saffron threads, soaked in 1 tablespoon of warm milk
- 1/4 cup chopped pistachios
Instructions:
- In a heavy-bottomed pan, bring the milk to a boil over medium heat, stirring occasionally to prevent the milk from sticking to the bottom of the pan.
- Once the milk comes to a boil, lower the heat to medium-low and let it simmer until it reduces to about 1/3 of its original volume. This can take about 45-50 minutes. Stir occasionally.
- Add the sweetened condensed milk, heavy cream, sugar, ground cardamom, and soaked saffron threads to the pan and stir until everything is well combined.
- Continue to simmer the mixture on low heat for another 10-15 minutes until it thickens slightly.
- Turn off the heat and let the mixture cool to room temperature.
- Once the mixture has cooled, pour it into a blender and blend until it becomes smooth.
- Add the chopped pistachios to the mixture and stir until they are evenly distributed.
- Pour the mixture into kulfi molds or small cups.
- Cover the molds or cups with aluminum foil and freeze for at least 6 hours or overnight.
- When you're ready to serve, remove the kulfi from the molds or cups by running them under warm water for a few seconds. Serve the kulfi immediately and enjoy!
