Italian Beef Rice Pilaf
Italian beef rice pilaf is a delicious and hearty dish that's perfect for a satisfying meal. Here's a simple recipe:
Ingredients:
- 1 lb beef sirloin, cut into small cubes
- 1 onion, diced
- 1 green bell pepper, diced
- 2 garlic cloves, minced
- 1 cup long-grain white rice
- 1 3/4 cups beef broth
- 1/2 cup canned diced tomatoes
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions:
- Heat the olive oil in a large skillet over medium-high heat.
- Add the beef cubes and cook for 5-7 minutes, or until browned on all sides.
- Add the onion, green bell pepper, and garlic. Cook for another 2-3 minutes, or until the onion is softened.
- Add the rice and stir to coat it with the beef and vegetable mixture.
- Add the beef broth, diced tomatoes, basil, oregano, paprika, salt, and pepper. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low and cover the skillet with a tight-fitting lid.
- Let the rice pilaf simmer for 20-25 minutes, or until the rice is tender and the liquid has been absorbed.
- Remove the skillet from the heat and let it sit, covered, for 5-10 minutes.
- Fluff the rice pilaf with a fork and serve hot.
