Pistachio Apricot Tart
Pistachio Apricot Tart is a delectable dessert that combines the nutty flavor of pistachios with the sweetness of apricots in a buttery tart crust. It's a delightful treat for pistachio and apricot lovers.
Ingredients:
For the Tart Crust:
- 1 1/4 cups all-purpose flour
- 1/4 cup ground pistachios
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, chilled and cut into small cubes
- 1 large egg yolk
- 1 teaspoon vanilla extract
For the Pistachio Filling:
- 1/2 cup ground pistachios
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, softened
- 1 large egg
For the Apricot Topping:
- 1 pound (450g) fresh apricots, pitted and sliced
- 2 tablespoons granulated sugar
- 1 tablespoon lemon juice
Instructions:
- Preheat your oven to 375°F (190°C). Grease a 9-inch tart pan with a removable bottom.
- In a food processor, combine the all-purpose flour, ground pistachios, and granulated sugar for the tart crust. Pulse a few times to mix.
- Add the chilled butter cubes to the food processor and pulse until the mixture resembles coarse crumbs.
- In a small bowl, whisk together the egg yolk and vanilla extract. Add the egg mixture to the food processor and pulse until the dough comes together.
- Transfer the dough to the prepared tart pan. Press the dough evenly onto the bottom and up the sides of the pan.
- In a separate bowl, prepare the pistachio filling. Mix together the ground pistachios, granulated sugar, softened butter, and egg until well combined.
- Spread the pistachio filling evenly over the tart crust.
- In a bowl, toss the sliced apricots with granulated sugar and lemon juice for the apricot topping.
- Arrange the sliced apricots on top of the pistachio filling, pressing them slightly into the filling.
- Place the tart pan on a baking sheet and bake in the preheated oven for about 30-35 minutes, or until the crust is golden and the apricots are tender.
- Once the tart is done baking, remove it from the oven and let it cool in the pan on a wire rack.
- Serve the Pistachio Apricot Tart at room temperature. You can dust the top with powdered sugar for a decorative touch, if desired.
