Oxtails Smothered in Gravy Over Rice
Ingredients:
- 2 lbs oxtails
- 1 cup all-purpose flour
- 1 large onion, diced
- 2 carrots, diced
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 cup red wine (optional)
- 2 tbsp tomato paste
- 2 sprigs fresh thyme
- Salt and pepper to taste
- Cooking oil for browning
Cooking Steps:
- Dredge oxtails in flour, shaking off excess.
- In a large pot, heat oil over medium-high heat. Brown oxtails on all sides.
- Remove oxtails and sauté onions, carrots, and garlic until softened.
- Add tomato paste and cook for a couple of minutes.
- Pour in red wine (if using) to deglaze the pot.
- Return oxtails to the pot, add beef broth, thyme, salt, and pepper. Bring to a simmer.
- Cover and simmer on low heat for 2-3 hours until oxtails are tender.
- Adjust seasoning and serve the oxtails and gravy over a bed of rice.
