Barbacoa-Spiced Easter Lamb
Ingredients:
- 1 bone-in leg of lamb (about 5-6 pounds)
- For the Barbacoa Spice Rub:
- 2 tablespoons ground cumin
- 2 tablespoons smoked paprika
- 1 tablespoon dried oregano
- 1 tablespoon ground coriander
- 1 tablespoon ground chili powder
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 2 teaspoons ground cinnamon
- 1 teaspoon cayenne pepper (adjust to taste)
- Salt and black pepper to taste
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1 cup beef or vegetable broth
- Juice of 2 limes
- Fresh cilantro, chopped (for garnish)
Cooking Steps:
Step 1: Preheat your oven to 325°F (163°C).
Step 2: In a bowl, combine all the ingredients for the Barbacoa Spice Rub. Adjust salt, pepper, and cayenne according to your taste preferences.
Step 3: Rub the spice mixture all over the lamb, ensuring it's well coated. Let it marinate for at least 30 minutes, or refrigerate overnight for enhanced flavor.
Step 4: In a large oven-safe pot or roasting pan, heat olive oil over medium-high heat.
Step 5: Sear the marinated lamb on all sides until browned.

Step 10: Baste the lamb with juices periodically during the cooking process.
Step 11: In the last hour of cooking, uncover the pot to allow the lamb to develop a beautiful crust.
Step 12: Once the lamb is done, remove it from the oven and let it rest for a few minutes before carving.
Step 13: Drizzle lime juice over the lamb and garnish with chopped fresh cilantro.
