Chicken al Pastor Recipe

A recipe for making chicken al pastor at home:

Ingredients:

  • 2 lbs. boneless, skinless chicken thighs, sliced thinly
  • 1/2 cup pineapple juice
  • 2 tbsp. chili powder
  • 2 tsp. dried oregano
  • 1 tsp. ground cumin
  • 1 tsp. smoked paprika
  • 1/2 tsp. garlic powder
  • 1/2 tsp. onion powder
  • 1/4 tsp. cayenne pepper
  • Salt and black pepper to taste
  • Corn tortillas
  • Diced onions
  • Chopped cilantro
  • Sliced pineapple (optional)
  • Lime wedges (optional)

Instructions:

  1. In a large bowl, mix together the pineapple juice, chili powder, oregano, cumin, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
  2. Add the thinly sliced chicken to the bowl and toss to coat evenly with the marinade.
  3. Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight.
  4. Preheat your oven to 350°F.
  5. Thread the marinated chicken onto a vertical spit or skewers and roast in the oven for about 45 minutes, or until the chicken is cooked through and slightly charred.
