For the Bibimbap sauce:
- 2 tablespoons gochujang (Korean red chili pepper paste)
- 1 tablespoon sesame oil
- 1 tablespoon soy sauce
- 1 tablespoon honey or sugar
- 1 tablespoon rice vinegar
For the Bibimbap:
- 4 cups cooked short-grain rice
- 8 ounces beef (sirloin, ribeye, or bulgogi beef), thinly sliced
- 4 cups mixed vegetables (carrots, spinach, bean sprouts, mushrooms, zucchini, etc.)
- 4 eggs
- 2 tablespoons vegetable oil
- Salt, to taste
- Sesame seeds, for garnish
- Optional toppings: sliced cucumber, kimchi, seaweed, etc.
Instructions:
- In a small bowl, whisk together the gochujang, sesame oil, soy sauce, honey or sugar, and rice vinegar to make the Bibimbap sauce. Set aside.
- Prepare the vegetables: blanch the spinach, sauté the carrots and mushrooms, blanch the bean sprouts, and julienne the zucchini. Season each vegetable lightly with salt.
- Heat 1 tablespoon of vegetable oil in a pan over medium heat. Stir-fry the beef until cooked through. Season with salt to taste. Remove from heat and set aside.
- In the same pan, heat another tablespoon of vegetable oil and fry the eggs sunny-side up or to your preference.
- Divide the cooked rice into four bowls. Arrange the cooked vegetables, beef, and fried eggs on top of the rice, leaving each ingredient in its own section.
- Drizzle the Bibimbap sauce over the top or serve it on the side. Garnish with sesame seeds.
- Serve the Bibimbap immediately and mix everything together before eating. You can mix it thoroughly or leave the ingredients separate if preferred.
