Summer Zucchini Salad

Summer is time of juicy vegetables and aromatic herbs. Why not to make easy and incredibly simple salad of all these? The recipe from Jamie Oliver is, as always, quick, healthy and very tasty. Im sure you will pleasantly surprise your family and guests with this original dish that can become an easy snack or an addition to baked chicken, juicy steak or aromatic barbecue.


Ingredients

  • Zucchini
    1 pcs
  • Lime
    1 pcs
  • Olive oil
    3 tbsp
  • Mustard
    1 tsp
  • Basil
    1 tsp
  • Chili pepper
    1 pcs



Steps

  • 1. For this recipe it is better to use young zucchini with a thin skin and small seeds inside. Wash zucchini. Cut off the tails. With a vegetable peeler or a slaw cutter cut vegetables into thin, almost transparent strips.
  • 2. Put the chopped vegetables into a deep bowl or a salad-dish, this way the salad can be mixed conveniently.
  • 3. Now prepare the filling. It is ideal to use a small jar or other small container with a tightly fitting lid. Pour olive oil in a bowl. Add spicy mustard. Cut lime in halves and squeeze out juice from one half. Add citrus juice to salad dressing.
  • 4. Now cover the jar with a lid and vigorously shake it for a minute for all the ingredients to join together in a homogeneous thick mixture. Of course, you can prepare the dressing in a deep bowl. Then it is better to mix all the ingredients with a whisk. Pour the prepared dressing on zucchini slices.
  • 5. Wash chili pepper, cut it into thin rings. If you want to make the salad less spicy, remove chili seeds, they are the hottest.
  • 6. Now add rings of chili pepper and basil leaves to the salad. Gently mix the salad for all ingredients to be covered with a thick dressing.
  • 7. Thats all! A light, refreshing salad with a spicy touch of ready. You can serve it immediately or wait for half an hour, the vegetables will become a little marinated and soak in a fragrant dressing.
