Cupcakes with cottage cheese for Halloween

Such cupcakes will perfectly suit your theme party for Halloween. Bold chocolate filling with bright cottage cheese cream and chocolate ornaments will be appreciated not only by your children but also adults. You can also decorate cupcakes with gum paste pumpkins or marzipan ghosts.

Steps

  • 1. First lets make the dough for cupcakes. In a bowl combine some sieved wheat flour, cocoa powder, dough loosener and vanillin. Whisk the ingredients to make them combine well.
  • 2. In another bowl combine two eggs and some caster sugar. Blend the mixture until light and bold.
  • 3. Then add some sour cream from 15% fat to the dough.
  • 4. Melt butter on the stove or on the microwave oven. When it gets a bit cooler add it into the dough. Blend it again until smooth.

  • 5. Add the mixture of dry ingredients into the dough in two stages.
  • 6. Mix the dough with the stand mixer to make its texture smooth and stiff.
  • 7. Place paper baking shells for cupcakes on the roasting tin. Fill them with the dough almost until the top.
  • 8. Place cupcakes into pre-heated oven up to 400 °F and bake them for 25 minutes till readiness.

  • 9. While cupcakes are cooling down lets make cream. In a bowl combine some cottage cheese, softened butter, sugar and vanillin.
  • 10. Whisk all ingredients until smooth with a hand blender. Add food grade dye and mix it with the cream. Put the cream into the cooking bag and cool it down in the fridge for half an hour. Decorate the rest of the cupcakes with the curd cream.
  • 11. Melt some black chocolate by double boiling. Draw the web on the cling film with the melted chocolate. Cool it down in the fridge to make it stiffen. Decorate cupcakes with chocolate ornament and serve our pastry to juice or coffee. Enjoy your meal!
