Chicken and Dumpling (Pelmeni) Soup

Delicious and nutritious chicken soup with dumplings (pelmeni) will perfectly warm you in a cold season. The recipe is simple and fast enough, especially if there is already made chicken broth in your fridge. You can use bought dumplings, but with home-made ones it will be more delicious of course.

Ingredients

  • Chicken skeleton

  • Potato

  • Carrot

  • Sunflower oil

  • Bay leaf

Steps

  • 1. First, let’s cook chicken broth. Wash chicken skeleton, put it in the pan and pour it over with two liters of cold water. Remove scum with a slotted spoon before the soup gets boiled. Boil the bones for half an hour, then remove them out of the broth. You can use chicken drumsticks, thighs or legs to make broth richer.
  • 2. Wash, peel and dice some potatoes.
  • 3. Add chopped potatoes to our chicken bone soup.
  • 4. Dice peeled onion and cut a carrot into quarter rings.
  • 5. Pre-heat some seed oil in the saucepan. Fry some onion and carrot until soft in it.
  • 6. Add vegetables right after potatoes to the soup.
  • 7. When the vegetables boil until semi done, add dumplings to the soup. You can use both home-made dumplings or bought ready -to- cook ones.
  • 8. Boil our soup for 10 minutes to make dumplings completely ready. Add some salt, spices and finely chopped greens a few minutes before finishing.
  • 9. Serve your dumpling soup hot. Season every portion with finely chopped leek.
