Blackcurrant Pancakes (Oladi)

Let’s cook delicious and bold pancakes with baked yoghurt and blackcurrent. You can use either fresh or frozen berries (unfreeze them in advance). The pancakes turn to be sweet enough and very flavoured due to cinnamon. The blackcurrant gives pleasant slightly sour taste making them especially tasty. Additionally to them, you can serve sour cream, honey, different sauce or topping.

Steps

  • 1. In a bowl mix sugar, dough loosener and ground cinnamon. Add one egg to the mixture.
  • 2. Whisk egg with sugar.
  • 3. Then pour some baked yogurt of room temperature into the mixture.
  • 4. Whisk the dough again. Add sieved flour to the dough in a few stages. Its quantity depends on the egg size and baked yoghurt fat content.

  • 5. Ready batter must be like stodgy sour cream. Wash and drain blackcurrant with some paper towels. Add berries to the batter and mix it.
  • 6. Fry pancakes until golden brown and then turn them into other side carefully using a spatula.
