Russian Cabbage Soup (Shchi)

Traditionally, cabbage soup (shchi) is boiled from sauerkraut or white cabbage, it depends on a season and taste preferences. There are meatless ones and cooked on chicken or meat bouillon. Today we will cook delicious and aromatic cabbage soup from sauerkraut on chicken bouillon. You can take any chicken part on a bound. Sauerkraut gives this dish a special slightly sour taste that makes cabbage soup especially tasty. You may add sweet pepper and mushrooms as well.

Ingredients

  • Chicken skeleton
    1 pcs
  • Water
    2 l
  • Potato
    5 pcs
  • Carrot
    1 pcs
  • Onion
    1 pcs
  • Pickled cabbage
    300 g
  • Refined oil
    3 tbsp
  • Salt
    - to taste
  • Black pepper
    0.5 tsp
  • Provencal herbs
    0.5 tsp
  • Paprika
    0.5 tbsp
  • Bay leaf
    1 pcs
  • Dill
    - to taste



Steps

  • 1. At first, prepare bouillon for soup. Clean chicken skeleton and pour with cold purified water. Cover a pan with a cap and put on fire. Take off foam before full boiling of bouillon with skimmer. Boil it for 30 minutes and then take chicken out.
  • 2. Sour sauerkraut from the pickle and cut.
  • 3. Add sauerkraut into prepared chicken bouillon. Boil it in a slow fire for 25 minutes.
  • 4. Clean potatoes, clean them from peels and cut at cubes.
  • 5. When sauerkraut is soft, add cut potatoes in a pan.
  • 6. Clear onion from husks and cut at cubes.
  • 7. Fry cut onion in vegetable oil for a couple of minutes.
  • 8. While frying onion, clean carrot and grate on a large grater.
  • 9. Add it to onion while mixing vegetables and continue passing them on a slow fire until soft.
  • 10. Then add onion with carrot in a pan with soup.
  • 11. When all vegetables are boiled and soft, add bay leaf, sweet pepper and finely chopped dill. Salt the dish and add spices to taste.
  • 12. Let soup to boil and turn of the fire. we will serve cabbage soup hot and with a slice of fresh bread. You can add pieces of boiled chicken fillet, half of chicken or quail egg or sour cream in every portion.
