Lithuanian Chicken Roulade (Zrazy)

We cook a fragrant zrazy for lunch – a dish of Lithuanian cuisine, which is a cutlet or a meatloaf with stuffing inside. Traditionally, zrazy are made from beef, but you can also use pork, chicken, turkey or minced meat from different types of meat. The filling can be varied: chicken liver with vegetables, mushrooms with onions and hard cheese, greens with cottage cheese, mashed potatoes, rice with boiled eggs. Today I suggest you to cook zrazys from chicken forcemeat with a stuffing of boiled eggs, fried green onions and fresh dill. The meat is very juicy and tasty, with a ruddy crispy crust. So nourishing zrazy will be an excellent alternative to cutlets or meatballs.

Ingredients

  • Chicken fillet
    700 g
  • Egg
    3 pcs
  • Bread
    3 pcs
  • Milk
    100 ml
  • Bread crumbs
    3-4 tbsp
  • Onion
    1 pcs
  • Sunflower oil
    100 ml
  • Green onion

  • Dill
    - to taste
  • Salt

  • Black pepper

Steps

  • 1. Transfer slices of white bread to a deep dish and fill with room temperature milk. Leave bread for 5 minutes to make it soft.
  • 2. Wash chicken fillet thoroughly, then dry and clean from tapes. Cut the meat into pieces of medium size so that it was more convenient to grind them into minced meat. Transfer pieces of chicken fillet into the blender bowl. Add a peeled bulb to the meat, cut into 4 parts.
  • 3. Squeeze slices of bread from the milk and add to the bowl of the blender to the rest of the ingredients. Add salt and spices to taste.
  • 4. Grind the ingredients to homogeneous consistency. Shift prepared chicken ground meat into deep dishes. If you do not have a blender, use a meat grinder with a fine grate to make mince.
  • 5. Wash chicken eggs, pour with cold water and boil for 10 minutes after boiling so that the yolk inside becomes hard. Clear hard-boiled eggs from the shell and cut at small cubes. Transfer crushed ingredients into a deep bowl.
  • 6. Wash the feathers a the green onion, dry and cut into thin rings. Fry green onions in a little amount of sunflower oil to remove excess bitterness from it.
  • 7. Add fried green onions to the bowl with crushed boiled eggs. Add finely chopped dill greens to the filling for flavor.
  • 8. Mix the filling so that it becomes homogeneous.
  • 9. Moisten hands in cold water, form a round cake from a small amount of forcemeat. Put a teaspoon of an egg and green onion filling into the center of the flat cake.
  • 10. Carefully tuck the edges of the flat cake so that the filling is inside. Thus, we form all zrazy. Each product is wrapped on all sides in crushed breadcrumbs.
  • 11. Pour on a non-stick frying pan a small amount of sunflower oil without a smell. When the oil warms up, gently put zrazy in bread pan on the frying pan and fry them to a golden crust on all sides.
  • 12. Then shift fried chicken zrazy into the heat-resistant dishes. Send the zrazy in a preheated oven to 200 degrees for 10-15 minutes so that they are baked and fully prepared.
  • 13. Finished chicken zrazy will be served hot with a garnish of boiled rice and vegetables.
