Sweet Citrus Bread

This bread (although in our case it is more biscuit, probably) is done with citrus juice. However, you can safely replace it with berries juice, there will be a completely different taste and color. You can leave bread in a container for 5 days and it will not stale at all, thanks to the recipe. The texture is friable, moist and fragrant. I am sure that many people will consider this dish as a crown one. Especially as it prepares quickly. A good script for the guests.


  • Whole wheat flour
    190 g
  • Baking powder
    1 tsp
  • Baking soda
    1/4 tsp
  • Sugar
    125 g
  • Cane sugar
    95 g
  • Vegetable oil
    120 ml
  • Egg
    2 pcs
  • Grapefruit juice
    70 ml
  • Yogurt
    80 ml


  • 1. Let's start with mixing dry ingredients, combine the flour with a corolla (190 g), baking powder (1 tsp) and soda (1/4 tsp).
  • 2. In another bowl, pour white sugar (100 g) and cane sugar (95 g). At this stage, you can add a zest of any citrus.
  • 3. Pour in the vegetable oil (120 ml) and beat well with a mixer.
  • 4. Add the eggs (2 pcs).
  • 5. Then pour in the citrus juice (30 ml). I used grapefruit, bought one. But it is better to squeeze the grapefruit itself, then the flavor and taste will be stronger and brighter. Well, and lemon is good as well. Also add neutral yogurt (80 ml) in a bowl.
  • 6. Stir and add dry ingredients.
  • 7. Lubricate the form with butter, dust with flour. And pour the dough into it. I have a mold of about 9x20 cm.
  • 8. Bake at 180 degrees for 40 minutes, maybe longer. At first, it will just blush, then it should crack from above. Check the middle with a skewer, it should be dry.
  • 9. While the bread is preparing – make syrup. To do this, combine a couple of tablespoons of sugar and 40 ml of juice in a saucepan. Cook until the sugar dissolves. Put the bread on the grate upside down.
  • 10. Pierce the "bottom" with a toothpick in a chaotic way and soak with syrup. It is most convenient to lubricate it with a brush.
  • 11. Serve it when the bread has completely cooled down. You can give it to the children to school, cutting a couple of slices. Excellent and useful snack.
