Carrot and Apple Soup
I do not know how about you, but I really like soup-puree. It is great when the composition of a dish becomes unobvious, when you can play with texture and serving. Such soups are served in cups and in cream bowls, some chefs serve them even in shots. And despite the monochrome nature of such soups, they cannot be called a boring dish.
Soup which I want to talk about today may seem strange – an apple, ginger, carrot? But believe me, the taste will not disappoint you. Let's start:
Ingredients

Carrot6 pcs

Leek stalk1 pcs

Ginger1 tsp

Garlic3 clove

Apple1 pcs

Olive oil30 ml

Vegetable broth1.5 l
Steps

1. To begin with, clean carrots and an apple, cut into large pieces. Finely chop the onions, ginger, garlic.

2. Fry onion in olive oil in the saucepan until transparent, add ginger and garlic, wait for 3 more minutes and you can take off. Meanwhile, the broth should go to a boil. Add the fried onions to it and cook for 2 minutes.

3. It is time to add carrots and an apple. You need to cook until the carrots are ready – pierce it with a fork, if it comes in easily – everything is ready! Drain most of the broth in a separate container (it can still come in handy). Mimic the soup with submersible blender. If it seems to you that it is too dense – just add a ladle of broth and continue working with a blender. As a result, a homogeneous, very delicate and fragrant mixture should be obtained.

4. What can I say, the first time I read the recipe, I began to doubt about a result. Not only there is ginger and an apple, but also all this needs to be turned into a puree.
