Creamy Soup with Saffron

Soup with cauliflower on coconut milk, you will lick your fingers. It is prepared indecently quickly; the ingredients are always at hand. I guarantee that in 15 minutes you will have soup ready for guests or a hungry family, it is great!


  • Coconut milk
    300 ml
  • Vegetable broth
    300 ml
  • Cauliflower
    400 g
  • Saffron
    1/2 tsp


  • 1. In a saucepan, combine vegetable broth with coconut milk, add cauliflower inflorescences (here it is not important if it either fresh or frozen) and a pinch of saffron.
  • 2. Put on medium heat and cook for 10-12 minutes, until the cabbage is ready.
  • 3. Once the cabbage is ready, remove from heat. Leave 3-5 inflorescences for decoration, and blend the rest with the blender. Here, the most important is your taste – to rub into a homogeneous puree or leave more noticeable pieces. In any case – it will be very tasty and rich.
  • 4. Serve the soup immediately, without hesitation. I add ground pepper and season herbs in the end.
