Homemade Tomato Soup with Gnocchi
There are many soups with tomatoes and, in truth, I love everything! Therefore, I will tell you about another, rather fast, but insanely tasty option. There are not so many ingredients that is good.
Gnocchi is an Italian dumpling, usually oval. Most often wheat flour, semolina, eggs, cheese, ricotta, potatoes, spinach, bread crumbs are used as ingredients. Gnocchi of small sizes are called "gnocchetti".
Ingredients

Onion1 pcs

Celery120 g

Olive oil2 tbsp

Vegetable broth1 l

Tomato - canned750 ml

Steps

1. So first we prepare sophrito – it is a mixture of onions, celery and carrots, cut in the same way and fried in oil.

2. Fry in a saucepan in olive oil until it is transparent.

3. Once the onion has become transparent, and the vegetables are soft – add broth and tomatoes. If you have whole tomatoes in the pot, you should grind them with a fork or potato (you know that thing, with which you make mashed potatoes).

4. Bring the soup to a boil, turn off and blender all. Special aesthetes can rub the resulting soup through a fine sieve for greater uniformity, I did not. In the end, add nyoki and let them "boil" for 3-4 minutes.

5. The soup is ready. Serve it with herbs, parmesan or sour cream. Very tasty, especially if you also like everything tomato.
