Ukrainian Cheese Pancakes (Syrniki)

The perfect recipe of Ukrainian cheese pancakes (syrniki) is found! Incredibly delicate, delicious and golden cheese pancakes perfectly keep the shape and do not fall apart in a frying pan. In ready-made products, semolina is not felt at all, thanks to it the syrups are especially lush and airy. If desired, raisins or other dried fruits can be added to the dough. Ready-made syrups can be served with sour cream, sweet and sour sauce, condensed milk, maple syrup or chocolate.

Steps

  • 1. Connect the chicken egg, sugar, vanillin and ground cinnamon in a deep bowl.
  • 2. Fill the mixture with a whisk so that the dry ingredients are completely mixed with the chicken egg.
  • 3. Then add semolina. Mix the mass and leave it for 15 minutes so that semolina is swollen.
  • 4. When the semolina swells, add the main ingredient – curd. If desired, it can be pre-wiped through a sieve or smashed to a homogeneous consistency by an immersion blender.

  • 5. Last add sifted wheat flour of the highest grade. The amount of flour can vary depending on its gluten and fatty cottage cheese, which you will use to make cheesecakes.
  • 6. After thoroughly mixing all the ingredients, knead the homogeneous dough. It should be homogeneous and easy to assemble into one lump.
  • 7. Wet your hands in cold water, form round cheese pancakes of the same size from the finished dough. Of the indicated number of ingredients, I obtained 12 items.
  • 8. Pour refined vegetable oil on a non-stick frying pan, let it warm up. Carefully put our preparations on the pan with butter.

  • 9. Fry the cheese pancakes until golden crust, then use the spatula to turn them over to the other side and bring them to readiness.
  • 10. Lay out ready-made cheese pancakes with a manga on a dish, that is woven with paper napkins to remove excess oil. Decorate the curds with sugar powder and fresh berries, serve them warm with coffee or tea.
