Sweet Corn Fritters with Avocado

If you are supporters of unusual breakfasts (especially if it is a day off), then for sure you have tried pancakes, omelets, scrambled eggs with bacon and so on in a circle. I want to share another good recipe for a morning snack, which is rather interesting and, I guess, interesting in a combination of tastes. Corn fritters are such puffy pancakes with corn, I serve them with bits of crispy bacon and avocado paste.


  • Sweet corn
    670 g
  • Whole wheat flour
    100 g
  • Sugar
    2 tbsp
  • Brown sugar
    1 tbsp
  • Salt
    - to taste
  • Black pepper
    - to taste
  • Milk
    50-100 ml
  • Avocado
    1 pcs
  • Bacon
    4 pcs


  • 1. First, prepare the bacon, fry it in a dry frying pan until crisp on both sides. Dry the bacon strips on a paper towel.
  • 2. Now prepare the corn dough. Put a half of the corn in the blender, as well as all the dry ingredients – sugar, pepper, salt, flour. Grind everything well so that the corn becomes a crumb.
  • 3. Pour 50 ml of milk and the remaining corn in a deep bowl. Then mixture from the blender. And mix the dough, look here, it should be pretty tight, but if it does not even stick together – top up with the milk in a tablespoon.
  • 4. After frying the bacon in the frying pan, the fat remains – fry the fritters in it (if you do not want – take a new frying pan and add a spoonful of olive oil). Spread the dough on a frying pan, trim it to make the round shape. Fry for 2-3 minutes on each side, do not worry that the crust will start to rouge pretty quickly – it is caramelized sugar.
  • 5. Put ready ones on a paper towel and sprinkle with grated cheese. It will fuse a bit, but it will not flow – exactly what we need.
  • 6. While the fritters are frying – make a pasta of avocado. Chop it into pieces, throw it into the blender bowl, add greens to taste (you can steam a couple of spoons of lemon juice) and beat into a paste. I love when pieces are felt that is why I do not beat for long time.
  • 7. And now just collect our turrets: a fritters, avocado pasta, a couple of bacon bits and everything on a new one.
  • 8. You will not believe how delicious it turns out. Firstly, fritters. They are very gentle, lush, sweet and with corn grains. Even independently, they are perfect for breakfast. Next is the melting cheese – tell me, who does not love it!? Crispy bacon – oh, what could be better in the morning, besides, it gives some saltiness. And now what I have added more as an experiment is avocado. It is simply mandatory there! A delicate texture with small pieces, a slightly sweet taste – pasta here acts both as a sauce and a link at the same time.
