Chicken Fillet a La Shivri

Chicken Shivri is a chicken fillet stuffed with chicken muslin with the addition of pistachios. Today I propose a more democratic variation of this dish – with walnuts. Yes, the appearance and tints of taste here will be slightly different. But the dish still gets very tasty. If you wish, you can always prepare a classic version, simply replacing the walnuts with pistachios – salted or unsalted.


  • Chicken fillet

  • Garlic

  • 1. Cut the small fillets and put them in the bowl of the blender. Add to them protein, chopped nuts, parsley and grated garlic. Pour in the cream.
  • 2. Grind until a homogeneous mass is obtained. Salt and pepper to taste.
  • 3. Cut the pockets in large fillets from the thick side. Fill the mousse. It is easiest for me to do this with a confectionery bag with a simple straight nozzle.
  • 4. Salt and pepper fillets. Fry from one side to a ruddy crust on a greased frying pan on high heat. Put it on the baking tray.
  • 5. Put into the preheated oven to 200 degrees and bake until ready for about 15-17 minutes. Serve with cream sauce.
