Chicken Fritters with Zucchini and Cheese

Today we will prepare delicious and juicy dietary fritters from chicken fillet with zucchini and hard cheese. I fried them in a frying pan in a small amount of vegetable oil. More simple and low-calorie option – bake cutlets in the oven or steam them. Thanks to fresh vegetables and greens, cutlets are obtained especially delicate, soft and fragrant. It is convenient to take them as a snack for work or a picnic. Such cutlets are suitable for almost any garnish: potatoes, cereals, pasta, salad from fresh vegetables.

  • Chicken fillet
    700 g

  • Seasoning for chicken

  • 1. Wash, dry and chopoffchicken fillet. Cut the meat small pieces, so it is more convenient to chop it into minced meat. Transfer the pieces of chicken fillet into the blender bowl. Add salt, seasoning for chicken and peeled garlic cloves.
  • 2. Chop the chicken fillet with garlic and spices into a homogeneous minced meat. Move the mince into a deep bowl. Clean the onion from the peel and cut it small cubes. Add the chopped onion into chicken ground meat.
  • 3. Separate greenery of fresh parsley from the stems and finely chop. Add parsley in the bowl to the rest of the ingredients.
  • 4. Grind a piece of hard cheese on a grater with a large cloth, add in minced meat for cutlets.
  • 5. Wash zucchini, cut the tails. Grind the vegetables on a large grater, squeeze from the juice and add to theminced meat. For a recipe, it is better to use young vegetables with small seeds and thin skin.
  • 6. Brake two chicken eggs into the resulting mixture, so that the cutlets keep the shape well and do not disintegrate.
  • 7. Thoroughly mix all the ingredients to get a thick and uniform minced meat.
  • 8. With a tablespoon, lay out the minced meat on a heated frying pan with vegetable oil, forming round cutlets.
  • 9. When cutlets are browned, carefully turn them over to the other side and bring them to readiness.
  • 10. Lay out finished chicken cutlets with zucchini and hard cheese on a dish, covered with paper towels, to remove excess oil.
  • 11. Serve ready-made chicken cutlets with fresh or pickled vegetables, mashed potatoes or a favorite sauce.
