Shortbread Cookies USSR

Who asked for shortcakes called «Rings» with nuts? Take the recipe and run to bake. The recipe is very simple and extremely successful. As a child, I did not particularly like these rings – I always wanted pies with cream and all that. But now I appreciated them – I ate 2 rings when they were still hot and cut for myself a volume of usual, less caloric food (I count calories). And I am not sorry, actually. By the way, this dough can be safely taken as a basis for another cookie – it is very tasty and nice in texture.


Ingredients

  • Butter
    200 g
  • Vanilla sugar
    1 tsp
  • Sugar
    125 g
  • Egg
    1 pcs
  • Baking powder
    1/4 tsp
  • Whole wheat flour
    375 g
  • Egg yolks
    1 pcs
  • Salt
    1/4 tsp
  • Peanuts
    100 g



Steps

  • 1. Beat butter with normal and vanilla sugar until creamy consistency.
  • 2. Add the egg and whisk again. Add the sifted flour with baking powder and salt and knead the dough.
  • 3. Form a disc from the dough, wrap it in a film and put into the fridge for 30-40 minutes. While the dough is cooling down, fry peanuts – in a frying pan or in the oven (for 5-7 minutes at 200 degrees). Cut not very finely with a knife.
  • 4. Take out the dough from the fridge, remove the film and roll it into a layer of 6-7 mm thick. With the notch, cut out the cookies, cut out the holein the center (I cut out with the mold for the tartlet and with the back end of the standard confectionery nozzle).
  • 5. Lubricate the rings with a lightly whipped protein and put the oiled side in a plate with nuts.
  • 6. Put it on the baking tray.
  • 7. Putinto theoven preheated to 190 degrees and bake for 15 minutes. Cool and serve.
