Fried Eggs with Mushrooms, Smoked Sausages and Cheese

One of the most popular breakfasts is scrambled eggs. It is tasty, healthy and quick. To diversify the daily diet, I suggest cooking scrambled eggs with mushrooms, smoked-flavored sausages and hard cheese. The recipe is simple, but very tasty. If desired, sausages can be replaced with boiled or smoked chicken fillet, minced meat or ham.

Ingredients

  • Egg

  • Champignon
    3 pcs
  • Smoked sausage
    2 pcs
  • Cheese
    75 g
  • Garlic
    2-3 clove
  • Tomato
    1 pcs
  • Chili sauce
    1-2 tsp
  • Olive oil
    50 ml
  • Dill

Steps

  • 1. Wash and clean fresh champignons. Cut the mushrooms half, cut them slices with a thickness of 2-3 mm. Peel garlic cloves and cut thin rings.
  • 2. In a deep frying pan, heat the olive oil. Put the sliced mushrooms and garlic in the pan. Stirring, fry the ingredients together for 3-4 minutes.
  • 3. Clean smoked sausages from the shell and cut rings. Sausages in a natural casing do not need to be cleaned.
  • 4. When the mushrooms and garlic roast a little, add the cut sausages to them. After mixing the mixture, continue frying the ingredients together over low heat.
  • 5. Wash and cut fresh tomato cubes. If desired, it can be pre-blanched in boiling water to peel it.
  • 6. After a few minutes, add the chopped tomato to the mushrooms and sausages. To give the dish a savory spicy note, add a little chili sauce. Adjust its quantity to taste. Salt the mixture and season it with your favorite spices.
  • 7. Stir and continue simmering the ingredients on low heat.
  • 8. In a separate bowl, roll 4 eggs. Chop a piece of hard cheese on a coarse grater and add to the eggs. Salt the mixture a little, season with pepper.
  • 9. Thoroughly mix the egg mixture until smooth.
  • 10. Cover the fried vegetables with mushrooms and sausages with egg mixture.
  • 11. Cover the pan with a lid, fry the eggs on low heat until the eggs are completely cooked. Decorate the finished dish with finely chopped dill.
  • 12. Serve prepared eggs with mushrooms, smoked sausages and cheese immediately, until it is cooled.
