Delicious Apricot Pie

In the apricot season, I hasten to please you with delicious and incredibly fragrant homemade pastries. Apricot pie is very gentle and soft. Cooking is a pleasure. It is enough to mix all the ingredients with a mixer, put the dough into the mold and add it with the halves of fresh fruit. It is best to use fleshy and not too juicy apricots, so that in the baking process they will not give excess moisture. Using the same recipe, you can make a peach or plum pie.

  • Butter
    120 g
  • Apricot

  • Whole wheat flour
    200 g
  • Sugar
    150 g
  • Vanillin
    0.25 tsp
  • Baking powder
    1 tsp
  • Salt

  • Powdered sugar
    1-2 tsp


  • 1. In a deep bowl, combine the softened butter and sugar. Using a mixer, beat the mixture to a uniform consistency.
  • 2. One by one, add chicken eggs to the dough, each time beating the mixture until a uniform consistency.
  • 3. Then add sifted wheat flour mixed with salt, vanilla and baking powder to the dough.
  • 4. Thoroughly mix the dough with a silicone spatula, achieving a uniform texture. The finished dough consistency should resemble softened butter.
  • 5. Transfer the dough into a silicone baking dish with a diameter of 20 cm. If you use a glass, ceramic or metal baking dish, cover it with parchment.
  • 6. Wash and dry fresh apricots, remove the bones. Put the halves of the fruit on the dough, slightly drowning apricots in it. If the fruit is not sweet enough, you can sprinkle it with a little sugar on top.
  • 7. Put the mold with the pie in a preheated oven to 180 degrees. Bake a cake at an average level of 35-40 minutes. Check readiness of the baking with wooden toothpick. If it is dry, the cake is ready.
  • 8. Cool the finished cake a little and gently transfer to a flat dish. Using a strainer, decorate the apricot cake with powdered sugar.
