Pasta with Sun-Dried Tomatoes, Olives and Sweet Peppers

Italian pasta is one of the most popular Mediterranean dishes. Pasta from durum wheat varieties are combined with almost any ingredients – from vegetables to seafood. You can cook pasta every day and at the same time never repeat, adding new tastes to the usual food. Today we will cook penne – short corrugated tubules, which are particularly loved by the Italians. Due to their ribbed surface, they capture the maximum of the sauce – tomato, white, meat or vegetable. In the paste, we will add dried tomatoes (you can easily replace them with fresh tomatoes), green olives and sweet peppers. As a result, you will get an amazing combination of bright tastes that every member of your family will surely like.


Ingredients

  • Penne
    100 g
  • Sun-dried tomatoes
    20 g
  • Olives
    8 pcs
  • Sweet pepper
    1 pcs
  • Garlic
    4 clove
  • Olive oil
    3 tbsp
  • Cheese
    50 g
  • Mixture of dried herbs
    1 tsp
  • Salt
    - to taste



Steps

  • 1. To begin, cut the sweet pepper, olives and garlic. Cut the sweet pepper two halves, peel off the seeds, divide each half of the pepper half and cut thin strips. Cut garlic cloves and olives thin rings.
  • 2. Pour olive oil in a hot frying pan, put the garlic rings and pepper strips into it, fry the garlic and pepper until soft over low heat.
  • 3. Next, put dried tomatoes and olives into the pan, add 150 ml of pure water, sprinkle with a mixture of Italian herbs, salt and pepper, cover the pan with the lid and simmer the ingredients on medium heat until water boils away by about half.
  • 4. Meanwhile, boil the penne. For 100 g of dry pasta you need 1 l of water. Bring the water to a boil in a large saucepan and salt, boil the penne for 9-10 minutes (or as per package instructions). Transfer the finished pasta into a colander and leave it there for 1 minute to drain.
  • 5. Pour the ready-made penne into the pan to the vegetables and, with the lid on, simmer the pasta on low heat until the pasta absorbs the remnants of the vegetable sauce. Next, add half of the total amount of grated cheese to the pasta and mix.
  • 6. Pasta with dried tomatoes, olives and sweet peppers is ready! Spread the prepared pasta on plates, sprinkle with the remaining grated cheese and serve to the table.
