Such a dish is prepared simply and fairly quickly, and you will certainly get pleasure from it. Additionally, you can add mushrooms, fresh or canned tomatoes.

Ingredients

  • Chicken thigh

  • Eggplant

  • Bell pepper

  • Garlic

  • Vegetable oil

Steps

  • 1. Wash chicken thighs and dry them from excess moisture with tissue paper. Cut each chicken thigh into two parts of approximately the same size. Rub the meat with a mixture of salt and spices. Leave the chicken for 30 minutes to marinate.
  • 2. Then put the pieces of chicken in the pan with hot vegetable oil. Fry chicken thighs until golden brown on both sides over medium heat.
  • 3. Wash eggplant and peel. Cut vegetables into pieces of medium size. Shift the sliced ​​ eggplant into deep dishes, salt and leave for 15 minutes to remove excess bitterness.
  • 4. Pre-squeeze the eggplants from the juice, add them to the pan to the fried chicken.
  • 5. Cut onions and sweet pepper quarters of rings.
  • 6. Add them to the pan with chicken thighs and eggplant.
  • 7. Mix the ingredients, continue simmering them together over low heat under the lid. During the process of cooking the vegetables will start up juice in which the chicken will be stewed. After 25-30 minutes, add garlic cloves passed through the garlic press. They give the dish a special flavor.
  • 8. Add salt and spices to taste. To make the finished dish even more appetizing, sprinkle it with finely chopped greens. It can be parsley, cilantro, dill or basil.
  • 9. After 3-5 minutes, turn off the fire. Serve stewed chicken with eggplants and pepper immediately after cooking, until it has cooled. Mashed potatoes or rice can be for the second course.
