Bulgur with Vegetables

Cooking tasty and healthy dish of bulgur and seasonal vegetables. For this recipe, we will steam bulgur in boiling water, and fry vegetables in olive oil until soft. Then it is only left to combine the ingredients and supplement them with fresh herbs. Instead of the ingredients listed in the list of vegetables, you can use a variety of mushrooms, green beans, corn, or green peas.

Ingredients

  • Bulgur
    250 g
  • Water
    500 ml
  • Eggplant

  • Zucchini

  • Carrot

  • Onion

  • Bell pepper

  • Tomato
    2-3 pcs
  • Garlic
    3 clove
  • Olive oil
    75 ml

Steps

  • 1. Carefully rinse bulgur under running water. Transfer the washed cereal in a deep dish and fill with boiling water in the ratio 1:2. Add salt to taste. Cover the dishes with a lid, leave the bulgur for 30 minutes. During this time, the cereal will swell and be fully prepared.
  • 2. In the meantime, prepare the vegetables. Wash bell pepper, clean the seeds and cut coarsely. Wash carrots, peel and cut into quarters of rings. Cut peeled onion large pieces. Peel garlic cloves, wash and cut thin slices.
  • 3. Put the chopped vegetables in a deep frying pan with heated olive oil. Stirring occasionally, pass vegetables until soft over low heat.
  • 4. Wash eggplant and cut large cubes. In the same way, grind zucchini. If the vegetables are young, it is not needed to peel them.
  • 5. In 5 minutes add chopped eggplant and zucchini to the rest of the vegetables. Stir and continue frying the vegetables together over low heat for another 10 minutes.
  • 6. Then add fresh tomatoes cut slices to the vegetables. Add salt, mix and continue stewing vegetables for another 5 minutes.
  • 7. Remove the vegetables from the heat, add finished bulgur to them. Gently mix all the ingredients.
  • 8. Decorate the finished dish with fresh herbs. Suitable ones are parsley, cilantro, dill or basil.
  • 9. Serve bulgur with vegetables hot as a main dish or side dish for meat or poultry.
