Lentil Soup with Sausages

Delicious and fragrant lentil soup in chicken broth is perfect for the cold season. It perfectly warms and nourishes. Hunting sausages complement this dish well, giving it a smoky flavor. Instead, you can use bacon or smoked chicken fillet. Red lentils are quite small, so it is quickly boiled soft and does not require pre-soaking, which greatly speeds up the process of cooking soup.

  • Chicken back

  • Hunter sausage
    3-4 pcs
  • Potato

Steps

  • 1. Cook chicken broth. Wash the chicken back, put it in a saucepan and fill with two liters of water. Bring the water to a boil, remove the foam and boil the broth over low heat for 35-40 minutes. Get the boiled chicken back from the prepared broth.
  • 2. Carefully wash red lentils and add to the finished chicken broth.
  • 3. Wash the tubers of potatoes, peel and cut cubes. Add chopped potatoes to the soup, followed by lentils. Cover the pan with a lid, cook potatoes with lentils for 10 minutes.
  • 4. In the meantime, do vegetables. Peel the onions and cut them small cubes. Put the onion in the pan with hot vegetable oil. Stir, fry the onion on low heat until soft.
  • 5. Then add to the onions carrots, chopped on a coarse grater. Mix the vegetables and continue frying them together for another 3 minutes.
  • 6. Then add hunting sausages to the vegetables, cut slices.
  • 7. For flavor add finely chopped garlic cloves.
  • 8. Stirring them occasionally, fry the ingredients together for a few more minutes to allow the vegetables and sausages brown. When the potatoes and lentils are soft, add the vegetable mixture with sausages to the soup.
  • 9. Boil the soup over low heat for another 5 minutes. At the end of cooking, add salt, spices and finely chopped fresh greens. Let the lentil soup boil again, then remove the pan from the heat.
  • 10. Serve ready soup hot with slices of fresh bread or rye crackers.
