Mussel Salad with Olives and Cherry Tomatoes

Let's make delicious and healthy seafood salad to put it on the holiday table. For this recipe, we will need some pickled mussels in oil or brine, green olives and cherry tomatoes. We will use unrefined olive oil to dress a salad. Additionally, you can add some wine vinegar, soy sauce, a little juice of lemon or lime.

Ingredients

  • Pickled mussels
    300 g
  • Olives
    100 g
  • Cherry tomatoes
    5 pcs
  • Red onion
    1 pcs
  • Napa cabbage
    100 g
  • Olive oil
    3 tbsp
  • Salt
    - to taste
  • Black pepper
    - to taste
  • Parsley
    10 g



Steps

  • 1. Sort out the napa cabbage into leaves, cut out a thick base. Cut them into thin strips.
  • 2. Clean red onion , cut thin half rings. Green olives cut rings too.
  • 3. Cut Cherry tomatoes into slices.
  • 4. In a deep salad bowl combine pickled mussels (strained from marinade), cherry tomatoes, green olives, Beijing cabbage, red onions and radish sprouts.
  • 5. Add salt and black pepper to taste. Dress the salad with some olive oil.
  • 6. Mix the salad so that all the ingredients are properly mixed.
  • 7. Ready-made salad with pickled mussels, olives and cherry tomatoes can be served in a common salad bowl or put in portions.
