Cauliflower Smoked Bacon Soup

Fragrant and tasty vegetable soup with smoked bacon is great for the cold season. It satisfies and warms perfectly. Quantity proportions of vegetables can be changed to your taste. In addition you can add celery, broccoli and paprika. As basis for the soup, you can use vegetable or chicken broth.

Ingredients

  • Cauliflower
    250 g
  • Potato
    4 pcs
  • Onion
    1 pcs
  • Carrot
    1 pcs
  • Smoked bacon
    150 g
  • Garlic
    2-3 clove
  • Water
    2 l
  • Olive oil
    3 tbsp
  • Bay leaf
    2-3 pcs
  • Paprika
    0.25 tsp
  • Salt
    - to taste
  • Black pepper
    - to taste
  • Allspice peas
    3 pcs
  • Parsley
    - to taste



Steps

  • 1. Wash, peel and cut into middle size cubes potato tubers. Put cut potato into the pan, pour 2 liters of cold water and place upon the fire. Boil vegetables for 5 minutes.
  • 2. Then add cauliflower, sorted on small inflorescences, to the potato.
  • 3. Peel and cut into small cubes onion. Fry onion on a frying pan with the warmed olive oil till soft.
  • 4. Add grated carrot to onion. Mix and continue frying vegetables all together for a few minutes.
  • 5. Add fried onion and carrot to the soup.
  • 6. Cut smoked bacon into small cubes and add to the soup right after the vegetables. Cook ingredients together for 5-7 minutes on medium fire.
  • 7. At the end of cooking add salt, seasoning and fine chopped fresh greens. For aroma add garlic passed through a press. Let the soup boil for a minute and then turn it off.
  • 8. Pour ready-made soup with smoked bacon and cauliflower into portion plates or soup mugs, decorate with greens and serve with slices of fresh white bread or garlic toasts.
