Russian Layered Beet Salad with Herring (Shuba)

Layered Beet salad with Herring that gets its unique name from the beets, potatoes, carrots and scallions that cover the diced herring like a fluffy coat. Each layer is dressed with either a mayo or sour cream dressing, but in my family, it has always been only mayonnaise. For beautiful serving it’s better to use portion ice-cream bowls or glass soup bowls so that all layers of salad are visible. It’s convenient to form salad with the help of culinary ring or a side from detachable baking dish.

  • 1. Wash potatoes and boil to readiness in salted water. Then cool tubers to room temperature, peel and grate on large grater. Lay out grated potatoes in a salad bowl or portion ware.
  • 2. Season potatoes layer with a small amount of black ground pepper. Put a thin layer of mayonnaise on the top.
  • 3. Peel, cut into small cubes and shift in a deep ware onion. Pour into onions a marinade made from water and vinegar mixed in equal proportions. To give to onions spicy aroma, add peas of allspice, coriander and several buds of cloves. Leave onions to marinade for 15 minutes.
  • 4. Clean from bones and cut into small cubes light-salted herring fillet. Filter chopped onions from marinade and add to fish. Mix thoroughly.
  • 5. On the top of potatoes, lay out a layer from herring with marinated onions in a salad bowl. Grease a layer with a small amount of mayonnaise
  • 6. For the next layer grate boiled beet on a large grater. Add to it pressed garlic. Add several tablespoons of mayonnaise and mix. Lay out beet mass in a salad bowl as next layer.
  • 7. Largely grated boiled carrots and smoked cheese combine with mayonnaise and mix to homogeneous consistence.
  • 8. Lay out the mixture from carrots and smoked cheese in a salad bowl.
  • 9. Send the ready-made salad “Delusion” to the fridge for several hours to impregnate. Before serving, decorate salad with fresh greenery. Dill, parsley or green onion will approach.
