It is very simple, quick and tasty. It is better to prepare toasts just before serving so that fried bread remained crispy, and fried eggs are warm.

Steps

  • 1. Cut white baguette on slices 1 cm thick. Let's dry them from two sides on a dry frying pan, in an oven or the toaster so that bread is browned.
  • 2. In a deep bowl, combine two eggs and melted butter cooled to room temperature. At will, it is possible to pour on eggs 20 ml of cream or milk. Let's add salt and black ground pepper to taste. By means of wire whisk, mix to homogeneous consistence.
  • 3. On a frying pan with the pre-heated olive oil, pour out egg mixture.
  • 4. Constantly stirring eggs slowly with a silicone or wooden spatula, let’s fry them on low fire for 3-4 minutes.

  • 5. On the cooled-down slices of the crispy baguette, lay out the leaves of fresh salad washed and dried from moisture.
  • 6. On the top, lay out ready fried scrambled eggs.
  • 7. Add to toasts thin slices of smoked pink salmon. Also, the light-salted salmon or Siberian salmon will approach.
