Sheep Cheese, Pumpkin and Smoked Pink Salmon Salad

Let’s cook tasty marinated pumpkin, smoked pink salmon and sheep cheese salad. The dish turns out healthy and nourishing, perfectly suitable for dietary or sports nutrition. Thanks to bright look and original combination of ingredients this salad is very popular and one of the first disappears from a table. That is why it can be prepared for a holiday table and can be served to guests a la carte or in the common salad bowl.

Ingredients

  • Sheep cheese
    100 g
  • Pumpkin
    100 g
  • Smoked pink salmon
    150 g
  • Bell pepper
    1 pcs
  • Red onion
    1 pcs
  • Lemon
    0.5 pcs
  • Lettuce leaves
    40 g
  • Microgreens
    30 g
  • Olive oil
    2 tbsp
  • Apple cider vinegar
    2 tbsp
  • Salt
    - to taste
  • Black pepper
    - to taste
  • Sesame seeds
    1 tsp



Steps

  • 1. Remove a core with seeds and peel a pumpkin. Using the peeler cut pumpkin pulp into long thin slices. Salt the cut pumpkin, season with black ground pepper and pour with apple vinegar. Let's leave vegetables for 15 minutes so that they become marinated.
  • 2. Wash and dry from excess moisture lettuce leaves and fresh greenery. Let's tear greenery with hands on large pieces and lay out everything in a deep plate.
  • 3. Peel and cut with thin half rings red onion. Wash red sweet pepper, clean from a seed box and cut into long straws.
  • 4. Let’s cut sheep cheese into large cubes. Cut smoked salmon on thin pieces.
  • 5. Roll slices of marinated pumpkin forming flowers. Lay out vegetable rolls in a plate with greenery. Next add the cut sheep cheese.
  • 6. Lay out half rings of red onion and red sweet pepper in a salad bowl. Then add pieces of smoked pink salmon.
  • 7. For dressing let’s mix 2 tablespoons of olive oil, one teaspoon of lemon juice and black ground pepper. Mix dressing to homogeneous consistence and pour it on ready-made salad. Let's add to the ready dish sesame seeds, if necessary add salt to taste.
  • 8. Serve ready-made sheep cheese, pumpkin and smoked pink salmon salad right after preparation while greenery remain fresh.
