Avocado and Fried Egg Crostini (Canapes)

Instead of usual omelet I suggest to make for breakfast tasty and healthy avocado and fried eggs crostini with quail eggs. By the way, such tasty snack will be appropriate both on a holiday table and a buffet reception. For the recipe it is possible to use different grades of bread: rye, wholegrain or bran bread. You can leave slices of bread fresh, dry in an oven or fry on a grill frying pan with addition of olive oil.

Steps

  • 1. Cut a fresh baguette on slices 1 cm thick. At will bread can be dried on a dry frying pan, in the toaster or an oven.
  • 2. Cut avocado in halves, remove a stone. Let's separate pulp from a peel by means of a tablespoon and cut on pieces of middle size. Let's sprinkle avocado with lemon juice to keep beautiful green color of pulp.
  • 3. Let's add to avocado small chopped dill. Mash mix with a fork to homogeneous consistence.
  • 4. Lay out on each slice of a baguette mix from avocado and greenery.

  • 5. Pre-heat a small amount of butter on a non-stick frying pan. Let's crack 4 quail eggs on a frying pan. Fry sunny side eggs so that white egg is completely prepared, and the yolk remains liquid.
  • 6. Lay out on each crostini one fried quail egg.
  • 7. Wash cherry tomatoes and cut into thin rings. Lay out on crostini rings of cherry tomatoes. Let's add a pinch of salt and black ground pepper. Decorate snack with fresh greenery.
  • 8. Serve ready crostini right after preparation.
