Potato Cutlets with Mushroom (Zrazy)

Potato cutlets (Zrazy) are made from mashed potatoes with different stuffing, usually these are meat, mushrooms, cabbage or cheese. In this recipe I use mushroom. For juiciness and aroma, mushrooms are fried on a frying pan together with onions. Potato is well combined with mushrooms, so the dish has harmonious taste. Potato cutlets (Zrazy) is served as a separate dish without any side dishes, it is only enough to use as a sauce sour cream which goes perfectly with zrazy and they become even tastier.


  • Champignon
    300 g
  • Potato
    800 g
  • Onion
    1 pcs
  • Whole wheat flour
    3 tbsp
  • Bread crumbs
    4 tbsp
  • Egg
    1 pcs
  • Vegetable oil
    100 ml
  • Salt
    - to taste
  • Black pepper
    - to taste


  • 1. Peel potato, wash, cut into small cubes and put in the ware with salted water for cooking. Cook potatoes to readiness.
  • 2. Meanwhile prepare a mushroom stuffing. Wash champignons, cut into cubes of the middle size. Peel onion and cut into small cubes.
  • 3. Fry mushrooms together with onions on a frying pan with pre-heated oil. Approximate time of frying is 5 minutes. If necessary stir the mix. Add salt and pepper to taste.
  • 4. Drain water from boiled potato and mash it into puree. It is better not to use the mixer or the blender for these purpose, it will make potato too sticky. Completely cool puree, break into one egg and mix.
  • 5. Afterwards put the necessary amount of flour to potato mix. Carefully mix all the components, to receive dense structure.
  • 6. Shape a potato tablet and put inside a mushroom stuffing.
  • 7. Fold a potato tablet, in kind of hiding a stuffing inside. Each preparing roll in breadcrumbs from all sides at the same time, making them of beautiful and right shape.
  • 8. On a frying pan warm oil, fry in it preparations on medium fire. The frying pan should not be covered, otherwise zrazy will begin to creep away and lose the shape. When one side is reddened, accurately by means of a turner turn them on other side.
  • 9. Zrazy with a champignons stuffing are ready to be served!
