Cheesy Carrot Fritters

Carrot fritters are a low-calorie dish which is greatly assimilated by a body, providing it with improbable use. It is the best of all to cook these fritters during the fall when there are loads of carrots on market. Also in fall carrot has the maximum of usefulness. Carrot fritters can be cooked in two ways – from in advance boiled carrots or to form fritters from previously crushed raw vegetable. The taste of fritters will differ as well. Also for a change in taste of fritters it’s possible to add other products at will. For example, cheese which during heat treatment will melt and make fritters even softer and juicier perfectly will approach. Carrots fritters have sweet taste what precisely will be pleasant to younger generation. Therefore safely use such fritters for a children's diet. At the same time process of frying can be replaced with roasting in an oven.

    300 g
  • Cheese
    100 g
  • Egg
    1 pcs
  • Onion
    1 pcs
  • Semolina
    20 g
  • Bread crumbs
    40 g
  • Garlic
    2 clove
  • Vegetable oil
    70 ml
  • Salt
    - to taste
  • Black pepper
    - to taste


  • 1. Peel carrots, wash up and chop into large strips using a usual grater.
  • 2. Peel onion and cut into small cubes.
  • 3. Put a big frying pan on a hob. Pour in a little purified oil and after warming up place onions on it. Brown vegetable the first two minutes separately from carrots, later add cut carrot. Components fry on low fire for about 8 minutes to softness of carrots. Periodically stir mix with a turner so that it did not burn from below. Literally in a minute until the end of process, press garlic in a frying pan.
  • 4. Completely cool stewed in oil vegetables and shift them in a deep bowl. Break one egg and mix thoroughly. At the same moment season mixture with pepper and salt to taste.
  • 5. Next to make mixture thick, add to it semolina. Let's leave it for 6 minutes for semolina to enlarge, making mix is thicker.
  • 6. Later blend all the mixture, completely crushing large pieces of carrots.
  • 7. Chop cheese of hard grades by means of a grater and add to homogeneous substance, mix.
  • 8. Make small preparations from carrot and cheese mix and lower each one in bread crumbs. Put a frying pan on fire, pour in oil, in 2 minutes place in it the prepared products. Fry fritters from both sides to a ruddy crust on medium fire.
  • 9. Shift ready fritters on a paper towel to remove excess oil. Carrot and cheese fritters can be served as in warm, and hot, preferably with sour cream.
