Blackcurrant Muffins

Let’s cook tasty muffins on kefir with blackcurrant. Dough turns out very soft and air, it rises well in an oven therefore fill molds for muffins no more, than on two thirds. Berries of blackcurrant make pastries very juicy and fragrant, giving to it a sweet-sour note. At will it is possible to add in addition to ready dough crushed nuts or chocolate crumbs. From the specified amount of ingredients I got 18 products.

  • Whole wheat flour
    250 g
  • Blackcurrant
    100 g
  • Egg
    3 pcs
  • Butter
    70 g
  • Kefir
    200 ml
  • Sugar
    200 g
  • Baking powder
    2.5 tsp
  • Vanillin
    1 pinch
  • Salt
    - pinch


  • 1. In deep ware join 3 eggs, sugar, a pinch of salt and vanillin.
  • 2. By means of the mixer whip up mix for 5-7 minutes to obtain magnificent and light substance.
  • 3. Then in the eggs which are whipped up with sugar let’s pour in kefir and the melted butter. Again mix to homogeneous consistence by means of the mixer.
  • 4. In several stages add the sifted wheat flour mixed with baking powder into dough.
  • 5. Using the mixer let’s mix dough to homogeneous consistence. Ready dough for muffins has to turn out rather thick.
  • 6. Insert small cupcake cases into a metal form for muffins. Let's fill them with the ready dough for two thirds. In each mold let’s lay out a small amount of berries of blackcurrant, sinking them a little in dough.
  • 7. Send muffins to the oven pre-heated up to 180 degrees. Let's bake them for 25-30 minutes at the medium level.
  • 8. Cool ready pastries on a wire rack to room temperature and serve with tea or coffee.
