Delicious Salmon and Broccoli Quiche

Let’s cook the tastiest pie with a basis from shortcrust pastry and a nourishing broccoli, red fish and cheese stuffing. For the recipe we will use the fresh or previously defrozen fish. A salmon, a Siberian salmon, a humpback salmon or a trout will approach. For filling of pie we need mix from eggs, milk or sour cream. In addition it is possible to add favourite seasonings or small chopped greenery to filling. The combination of the thin crackling dough and a fragrant stuffing in the most delicate egg filling makes this open French pie incredibly tasty and appetizing.

Ingredients

    350-400 g
  • Broccoli
    250 g
  • Egg
    2 pcs
  • Cheese
    150 g
  • Whole wheat flour
    250 g
  • Butter
    125 g
  • Water
    2-3 tbsp
  • Sugar
    0.5 tsp
  • Sour cream
    200 g
  • Salt
    - to taste
  • Black pepper
    - to taste



Steps

  • 1. In deep ware let’s sift wheat flour of high grade. Add a pinch of salt and 0.5 teaspoons of sugar and mix.
  • 2. Grate cold butter on a large cloth and add to flour mix.
  • 3. With fast movements grind butter with flour to receive small crumbs. Then we will add several tablespoons of ice water to mix and knead homogeneous elastic dough. Let's wrap ready dough in food wrap and send to the fridge for 30-40 minutes so that it is cooled.
  • 4. Meanwhile let’s prepare a stuffing. Wash a fresh salmon and clean from skin and bones. Let's cut fillet of salmon on small pieces.
  • 5. Wash broccoli and sort on small inflorescences. Let's boil broccoli in salted water for 3 minutes then cast away vegetables on a colander and drench with ice water. Join the blanched broccoli with salmon. Add to a stuffing the grated largerly hard cheese and mix.
  • 6. Evenly distribute the cooled shortcrust pastry on a heat resisting ware with a diameter of 22-24 cm, forming high sides. Let's puncture pastry with a fork so that it is not deformed during baking.
  • 7. Over the pastry lay out a piece of a food foil, from above distribute evenly a layer of beans or special ceramic balls for baking. Send a ware with the pastry to the oven warmed up to 180 degrees for 10 minutes so that a basis for pie is baked to semi-readiness.
  • 8. Then take a basis for quiche from an oven. Lay out a fish and broccoli stuffing on pastry in an even layer.
  • 9. Let's prepare filling for the pie. In separate ware let’s combine 2 eggs, sour cream, salt and mix of black ground peppers. Let's mix with a wire whisk, trying to obtain homogeneous consistence.
  • 10. Let's pour egg mix in a stuffing.
  • 11. Send quiche with broccoli and a salmon to the oven warmed up to 180 degrees. Let's bake pie at the medium level for 30-35 minutes. During this time filling has to prepare completely, and the top of pie become golden.
  • 12. Let’s cool a little in ware ready-made quiche with salmon then cut on portion pieces and serve warm.
