Korean Marinated Zucchini

Today we suggest you together with us to make amazing korean marinated zucchini from a good combination of summer vegetables. The juicy taste of our marinated vegetables will perfectly supplement nice meat delicacy or will adequately decorate any fish dish.


  • Zucchini

  • Carrot
    400 g
  • Vegetable oil
    100 ml
  • Onion
    160 g
  • Sugar
    80 g
  • Salt
    1 tbsp
  • Vinegar
    4 tbsp
  • Coriander
    1 tsp
  • Garlic
    5 clove
  • Paprika
    ¼ tsp
  • Black pepper
    1 tsp


  • 1. Let’s prepare necessary ingredients for work. Peel a young zucchini from the top layer and seeds. Wash carrots and peel. Clean onions and garlic cloves from a peel. We use two jars of 0.5 liters which we sterilize by boiling (15 minutes) in advance. Using a cloth of a special grater for the Korean carrot, grate zucchini.
  • 2. By means of the same grater let’s crush carrots.
  • 3. Cut all onions in the form of half rings.
  • 4. Let's make spicy marinade. Crush coriander a little. Add seasoning (mix of peppers) and passed through press garlic cloves there. Mix everything.
  • 5. Fill seasonings with vegetable oil and vinegar. Let's add slightly hot pepper. Salt and add the specified amount of sugar. Thoroughly mix everything. Our marinade is ready
  • 6. Lay out the crushed vegetables in a pan.
  • 7. Let's fill vegetables with the made spicy marinade. Carefully mix everything with a wooden spoon. Send to fridge to cool down. To achieve better level of readiness it is better that our spicy salad is left in the fridge for whole night.
  • 8. In the morning spread out ready salad in the dry, in advance sterilized jars and just cover with lids. Let's put on a bottom of a big pan with the boiling water.
  • 9. In such state sterilize jars with vegetables no less than 20 minutes. Then tightly close the lids, wait until cools down and send our preparation to be stored.
