Chicken Stuffed Zucchini Boats

The stuffed vegetables baked in an oven are the fine idea for a tasty and useful family lunch or a dinner. In the summer and in an early autumn the choice of vegetables is huge so the recipe can be changed depending on your flavoring preferences. Today I suggest preparing the zucchini stuffed with chicken and vegetables. The vegetables baked under a cheese crust turn out especially tasty and fragrant. For a stuffing I suggest to use boiled chicken fillet, it can be prepared in advance. At will meat can be fried together with vegetables.

Ingredients

  • Zucchini

  • Chicken fillet
    300 g
  • Cheese
    150 g
  • Carrot
    1 pcs
  • Onion
    1 pcs
  • Garlic
    2-3 clove
  • Tomato sauce
    2 tbsp
  • Vegetable oil
    50 ml
  • Seasoning for chicken
    0.5 tsp

    - to taste



Steps

  • 1. Wash young zucchini and cut off tails. Cut vegetables lengthways in halves. Accurately remove a core by means of a teaspoon, forming “boats” with the wall thickness of 1 cm.
  • 2. Let's lower boats from zucchini in the boiling salted water. Boil thoroughly preparations for 5 minutes so that vegetables became softer. Lay out the blanched zucchini in the heat resisting ware for roasting greased with a small amount of vegetable oil.
  • 3. Let's prepare vegetables for a stuffing. Wash carrots, peel and grate on a large grater. Clean onions from a peel and cut into small cubes.
  • 4. On a frying pan with the warmed vegetable oil let’s lay out the crushed vegetables. Periodically stirring slowly, brown onions with carrots to softness on low fire.
  • 5. Boil chicken fillet to readiness in salted water with addition of bay leaf and black allspice. Let's cool meat to room temperature and cut it into small cubes. Also cut a core of zucchini into cubes of the small size.
  • 6. Let's add chicken and zucchini to the browned vegetables and mix. Continue to prepare ingredients together on low fire for 5 more minutes.
  • 7. Then we will add hot tomato sauce, passed through a press garlic cloves and small chopped greenery to a stuffing. Let's bring a stuffing to taste by adding salt and ground spices and mix.
  • 8. Let's fill with stuffing a ready zucchini boats.
  • 9. Grate hard cheese on a large grater and evenly distribute it over a stuffing.
  • 10. Send the stuffed zucchini to the oven warmed up to 180 degrees. Let's bake vegetables at the medium level for 25-30 minutes. During this time zucchini will prepare completely, and cheese will melt and redden.
  • 11. The ready stuffed zucchini serve hot as a main course, having decorated with fresh greenery.
