Red Currant Poppy Seed Pie

Summer is time for delicious and juicy berries and fruits. Taking advantage of the moment, we will prepare a home pie with red currant and poppy seed. Thanks to fresh berries it turns out very fragrant, with sour-sweet note. Pastry rises well in the oven and dough is very gentle. The recipe is fast and simple enough. It is only necessary to mix all ingredients with a mixer, then add flour to the mixture, pour the dough into a heat-resistant ware and wait for the amazing aroma of home pastry to spread throughout the kitchen.

  • Whole wheat flour
    300 g
  • Butter
    200 g
  • Egg
    4 pcs
  • Sugar
    180 g
  • Red currant
    150 g
  • Poppy seeds
    2 tbsp
  • Baking powder
    1.5 tsp
  • Vanillin
    1 pinch
  • Salt
    1 pinch

  • 1. In deep ware let’s connect 4 chicken eggs and sugar.
  • 2. Whip the mixture at maximum mixer speed until gassy and light substance is obtained. This process will take approximately 7-10 minutes.
  • 3. Melt butter on the cooking surface or in a microwave oven. Cool the butter to room temperature and add it to the whipped egg mixture.
  • 4. In a separate ware let’s combine sieved wheat flour, baking powder, salt and vanillin. After mixing the dry ingredients, in several steps add them to the dough, each time mixing the structure to homogeneous consistence.
  • 5. Then add dry poppy seed to the dough and mix.
  • 6. Sort the red currant, wash and dry from excess moisture on a paper towel. Mix the berries with a tablespoon of wheat flour and add them to the dough. Gently mix the pie dough with a silicone turner so that all the ingredients are connected.
  • 7. Pour the finished dough into a heat-resistant ware. I used a silicone mold with a hole inside, it doesn't need to be previously greased with butter. If you use a glass or metal baking mold, grease it with a small amount of butter in advance.
  • 8. Send poppy seed and red currant pie to the oven pre-heated to 180 degrees. Let’s bake pie at the medium level for about 45-55 minutes. Gently remove the ready pastry from the mold, cool down to room temperature and decorate with sugar powder.
  • 9. Fragrant poppy seed and red currant pie let’s serve with tea or coffee.
  • 10. Bon Appetite!
