Russian Street Food Chebureki

Chebyreki is a common Russian pastry that is usually filled with ground meat. Also it’s the most favorite Russian street food. Traditionally, chebureks are prepared from unyeasted dough. To make them bubble-like, vodka is often added to the dough when kneaded. There are also dough recipes for chebureks on kefir, milk, sparkling water and beer. Today I will tell you the simplest and fastest recipe for chebureks from the ready puff pastry. As a filling we will use pork and chicken meat with addition of onion and greenery for juiciness. In addition, hard cheese, mushrooms or fresh tomatoes can be added to the filling. Chebureks according to this recipe are very tasty and crispy. Thin puff pastry and juicy fragrant mince inside is what could be better?

  • Puff pastry
    500 g
  • Chicken fillet
    250 g
  • Pork
    250 g
  • Onion
    1 pcs
  • Vegetable oil
    200 ml
  • Dill
    50 g
  • Parsley
    50 g
  • Salt
    - to taste
  • Black pepper
    - to taste



Steps

  • 1. Wash chicken fillet and pork and dry from excess moisture with paper towels. Clean the meat from fat and skins and cut the fillet into medium-sized pieces. Grind pork and chicken through a meat grinder with a small grate.
  • 2. Peel onions, cut with the smallest cube and add to the mince.
  • 3. Separate from stems dill and parsley, wash and cut small. Add cut greenery, salt and black ground pepper to taste to mince for chebureks. Mix the filling thoroughly to homogeneity. If you want, you can add some cold water, milk or ground ice to the mince so that the chebureks turn out to be even juicier.
  • 4. In advance remove from the fridge the puff pastry so that it unfreezes and becomes elastic. Divide the dough into 8 identical parts. Roll one part of dough into round layer with thickness of 2 mm.
  • 5. On one half of the dough we put 2 tablespoons of filling.
  • 6. Cover the filling with the second half of dough, carefully pinch the cheburek and cut the edge with a shaped knife. In this way we will form all 8 preparations.
  • 7. In a wide pan let’s pre-heat vegetable oil. Carefully lower our preparations into hot oil.
  • 8. Fry chebureks from puff pastry on medium heat to golden crust on both sides so that the filling inside is fully prepared.
  • 9. Shift ready chebureks from puff pastry with meat on a plate covered with paper towels to remove excess oil.
  • 10. Serve fragrant chebureks immediately after cooking as long as they remain hot and crispy.
