Baked Hake with Couscous and Vegetables

Today for dinner we prepare an unusually delicious hake baked in an oven on a pillow from couscous with vegetables. The fish is very juicy and fragrant. The fluffy couscous with browned red onions and cherry tomatoes is an excellent side dish to the fish fillet. Such dish will not only perfectly complement the everyday menu, but will also add exquisite notes to it.


Ingredients

  • Hake
    2 pcs
  • Couscous
    1 glass
  • Red onion
    1 pcs
  • Cherry tomatoes
    6 pcs
  • Lemon
    0.5 pcs
  • Olive oil
    50 ml
  • Fish seasoning
    0.5 tsp
  • Salt
    - to taste
  • Black pepper
    - to taste



Steps

  • 1. Peel red onion and cut into thin quarter rings. Wash cherry tomatoes and cut into four parts.
  • 2. Put crushed red onions in a deep pan with pre-heated olive oil. Stirring, letā€™s brown it on low fire until soft.
  • 3. Then add cherry tomatoes to the browned onion. Add some salt and a mix of ground peppers to taste, mix.
  • 4. Pour in steep boiling water to couscous and leave to steam under the lid for 5 minutes. Then drain water from the cereal and shift couscous to a pan with vegetables.
  • 5. Mix the couscous with browned vegetables and transfer the mixture into a heat-resistant ware for baking.
  • 6. Wash hake and cut off tail and fins. Cut the belly of the fish and remove the insides and black skins. By means of a sharp knife letā€™s divide the hake carcass into two fillets, remove the spine and large bones. Cut every fillet into halves.
  • 7. Put the hake fillet skin up on a pillow from couscous and vegetables. Salt the fish to taste, season it with a mixture of ground spices. Water the fillet with juice of a half of lemon to give the fish additional flavor.
  • 8. Send a hake on a pillow from couscous and vegetables to a pre-heated up to 180 degrees oven. Bake the dish at the medium level for 25 minutes.
  • 9. Serve the ready dish hot and decorated with fresh greenery.
