Russian Beet Salad with Prunes and Walnuts

Bright, colorful and juicy salad from boiled beet with prunes and walnuts will certainly taste to your family and guests. The recipe is quite simple and budget, even the beginner cook will cope. The piquant beet salad is particularly good during the cold season, when we feel high lack of vitamins. The dish is very tasty, useful and nutritious.

  • Beet
    200 g
  • Prunes
    50 g
  • Walnuts
    50 g
  • Garlic
    1-2 clove
  • Sour cream
    3 tbsp
  • Salt
    - to taste
  • Black pepper
    - to taste


  • 1. Wash the beet carefully and boil to readiness. Cool the boiled beet to room temperature and clean the vegetable from the peel.
  • 2. Grind the boiled beet on a large grater.
  • 3. Wash prunes and leave in hot water for 10 minutes. Dry fruits from excess moisture, cut into straw and add to grated beet.
  • 4. Fry walnut kernels a little in a dry frying pan, ground with a knife and add to the rest of the ingredients.
  • 5. Then add to the salad garlic clove passed through the press.
  • 6. Salt and season the obtained mixture with black ground pepper to taste. Dress the salad with thick sour cream or natural yogurt.
  • 7. Mix the salad carefully so that all ingredients are connected. Send the ready salad to the fridge for 1 hour so that it will insist and cool down.
