Russian Cheese Pancakes with Rice Flour and Raisins

Let’s prepare for breakfast fragrant, delicious and useful cheese pancakes with raisins. Instead of traditional wheat flour, we will use gluten-free rice flour. To taste and consistence the cheese pancakes are the same as prepared on wheat flour, but the crust is more crispy. By the way, flour for this recipe can be prepared on your own by grinding dry rice in a coffee grinder. Sour cream, jam, chocolate or caramel sauce will be excellent as an addition to the cheese pancakes.

  • Cottage cheese
    400 g
  • Rice flour
    3 tbsp
  • Egg
    1 pcs
  • Raisins
    2 tbsp
  • Sugar
    3 tbsp
  • Vanillin
    1 pinch
  • Vegetable oil
    75 ml


  • 1. Pass through a sieve cottage cheese and transfer it into deep bowl.
  • 2. Add one large chicken egg to the cottage cheese.
  • 3. Then let’s add sugar and vanillin and mix thoroughly.
  • 4. Then add sieved rice flour to the cheese pancakes dough. Mix the dough again to a homogeneous consistence.
  • 5. Sort raisins without bones, pour with boiling water and leave for 10 minutes. Then dry raisins from excess moisture with paper towels. Let's add raisins to the cheese pancakes dough.
  • 6. Divide the ready dough into 10-12 parts, form round cheese pancakes from them and coat the preparations with rice flour.
  • 7. Put cheese pancakes with raisins on a frying pan with pre-heated vegetable oil.
  • 8. Fry the products on low fire until golden crust on both sides.
  • 9. Place the ready-made cheese pancakes on a plate covered with paper towels to remove excess vegetable oil.
  • 10. Serve fragrant cheese pancakes with raisins in warm form, decorated with sugar powder.
