Greek Spinach Pie (Spanakopita)

Today I suggest you to try an incredibly tasty and useful combination of products: spinach and bryndza cheese on a puff pastry. We will prepare fragrant Greek layered pie (Spanakopita). Fresh or frozen spinach can be used for the recipe. Cheese for the baking should have slightly sour and salty taste, so it will be better combined with flat taste of spinach. In this recipe, I used bryndza.

Ingredients

  • Puff pastry
    1 kg
  • Bryndza
    300 g
  • Spinach
    400 g
  • Onion
    2 pcs
  • Egg
    2 pcs
  • Vegetable oil
    25 ml
  • Milk
    50 ml
  • Dill

  • Parsley
    - to taste



Steps

  • 1. Put frozen spinach on a dry frying pan. Stirring, let’s warm the greenery on low fire until complete defrosting.
  • 2. Peel onions and cut into cubes. Put vegetables in a pre-heated frying pan with vegetable oil. Periodically stirring, let’s fry onions on low fire until light golden brown.
  • 3. In deep ware connect unfrozen spinach and browned onions.
  • 4. This Greek Spinach Pie recipe is a homemade version of the traditional Greek spanakopita with a couple of twists. This version uses cheese: bryndza. Break bryndza with our hands into small crumbs and add to the pie filling. The key filling ingredients in a classic spanakopita recipe are spinach and feta cheese.
  • 5. Wash dill and parsley, cut finely and add to the rest of the ingredients.
  • 6. In a separate ware connect 2 chicken eggs and 50 ml of milk. Mix the mixture with a wire whisk until homogeneity.
  • 7. Leave 2 tablespoons of egg-milk mixture to grease the pie, the rest of it add to the filling. Mix the ingredients carefully to make the filling homogeneous.
  • 8. Roll half of the puff pastry into a rectangular layer with thickness of 3-4 mm. Put the dough in a heat-resistant form, covered with baking paper, forming sides with height of 1.5-2 cm. Above the dough put the even layer of a filling from spinach and bryndza.
  • 9. Roll the remaining half of the dough into a rectangular layer 3-4 cm thick. Put the dough on the filling and carefully attach the edges of the pie, turning them inside. Use a sharp knife to cut the pie on square segments. Grease the Greek pie with an egg-milk mixture using a cooking brush.
  • 10. Send the pie to a pre-heated to 180 degrees oven. Bake it until golden brown for about 25-30 minutes.
  • 11. Cut the ready pie into portion pieces and serve in warm form. Baking can be supplemented with kefir or sour cream.
