There are many recipes in which only yolks are required and then egg whites are left out. Where to use egg whites? There are many options, for example, to bake a meringue or a meringue cake, to add egg whites to an omelet. Or you can bake meringue cookies with the addition of nut flour and ground nuts. It will turn out very tasty.

  • Egg white

Steps

  • 1. Almonds can be replaced with any other nuts to taste, as can be nut flour - use the one available. Dough is prepared quickly, so we immediately turn on the oven to warm up to the temperature of 120 ° C, and cover the big baking sheet with the bakery parchment. Ground the almonds in a food processor or coffee grinder so that small parts of nuts remain for texture.
  • 2. Let's whip the egg whites. Start whipping at low speed of the mixer, gradually increasing the speed to the maximum. Once the egg whites start to cream, let’s add sugar in portions without stopping the whipping process. Whip the egg whites with sugar to soft peaks, finally add lemon juice. After adding juice, let’s whip for about a minute.
  • 3. Add nut flour and crushed almonds to the whipped egg whites. With a spoon, add the nut ingredients in the mass with bottom-up movements. Put the dough on the baking sheet in the form of small cookies of the desired shape. You can do this with a spoon or a pastry bag.
  • 4. Send the baking sheet with the preparations to the pre-heated oven and bake for about 45-50 minutes. During the baking do not open the oven, only at the end of baking time you can check cookies for readiness.
  • 5. The ready cookies have hardly changed: they have not increased in volume and have not become brown. Hot cookies have a soft middle that will become crispy after cooling down. If you want to make the cookies crispier, leave it in the turned off oven for another 15-20 minutes.
  • 6. Let the ready cookies cool slightly on the baking sheet, and then transfer them to the wire rack for complete cooling. From these cookies you can make cakes that taste something like the famous "Macarons." For this purpose let’s apply on one cookie a generous portion of any stable cream and cover with a second cookie.
  • 7. It is important to know that the cream will inevitably soak the cookies, which will make them soft after 1 hour.
