Ingredients

  • Cottage cheese
    220 g
  • Whole wheat flour
    220 g
  • Sugar
    100 g
  • Salt
    1 pinch
  • Egg
    2 pcs
  • Vanillin
    - to taste
  • Baking soda
    ½ tsp
  • Lemon zest
    ½ tsp
  • Powdered sugar
    - to taste
  • Vegetable oil
    - to taste

Steps

  • 1. Let's prepare ingredients. It is desirable that the cottage cheese is not too wet, otherwise you will need to add a little more flour to make the desired dough consistence. Zest can be removed from any citrus fruit that are found in the kitchen. Put cottage cheese in a deep bowl and add sugar with vanillin. Let's knead everything with the masher. If cottage cheese is too coarse, it can first be grated through a sieve for a more gentle structure of the finished pastry.
  • 2. Add eggs in cottage cheese and sugar mixture and again knead everything.
  • 3. So far it turns out to be rather liquid.
  • 4. Add flour, soda and zest and mix everything. At this stage you can use a spoon or knead the dough with your hands. Give the dough "to rest" for 20-30 minutes.
  • 5. Then knead the dough again. It should be soft and sticky, but still hold a shape well. Grease hands and working surface with vegetable oil. Make walnut-size balls from the dough.
  • 6. Let’s heat enough vegetable oil in a deep saucepan. To make sure without a cooking thermometer that the temperature of oil is suitable for frying donuts, let’s throw a piece of dough into the pan. If a piece just falls to the bottom of the pan - the oil has not warmed enough yet, if a lot of bubbles have appeared around the piece of dough and it has started to rise to the surface - you can start frying. Fry donuts on medium heat until ready. Put them in hot oil one by one. Don’t overcrowd the pan or the oil will lose heat. Donuts increase in size during frying.
  • 7. Remove golden donuts from the oil by perforated spoon and transfer to a paper towel to absorb excess oil.
  • 8. You can eat donuts warm or cooled with powdered sugar.
  • 9. Especially delicious this pastry goes with a glass of cool milk! Bon Appetite!
