Gentle Pancakes (Russian Blini)

It’s a Pancake week, so it's time to cook delicious pancakes for family and friends. There are big varieties of pancake recipes: chocolate, rye, pumpkin, on potato broth and fruit yogurt. Today I offer you another simple and delicious recipe for kefir pancakes on basis of pate a choux. They are very gentle, soft and thin. To taste pancakes turn out neutral, so they will be suitable for both sweet and salty filling. This time I made pancakes for breakfast, so I served them with honey and gooseberry jam.

Steps

  • 1. Break 2 chicken eggs in the deep ware.
  • 2. With the help of a mixer, whip the eggs for 2-3 minutes so that they become lighter and increase in volume.
  • 3. Without stopping whipping eggs with a mixer, let’s pour in a ware 250 ml of steep boiling water in thin jet. As a result, high lush foam is formed.
  • 4. Then add kefir to the pancake batter.

  • 5. For pancakes to be more elastic, pour in batter 2 tablespoons of olive oil.
  • 6. Add sugar, salt and food soda to the obtained mixture.
  • 7. The last let’s add into batter sieved wheat flour.
  • 8. Mix the batter to a homogeneous consistence with a mixer or rubber spatula. It should be homogeneous and not too thick. Cover the ready pancake batter with food wrap or towel and leave it for 30 minutes.

  • 9. After half an hour, you can start cooking pancakes. Grease the hot pancake frying pan with a small amount of vegetable oil using a cooking brush. Pour a small amount of pancake batter onto the frying pan. By rotating the frying pan with circular movements, distribute the batter evenly throughout the perimeter.
  • 10. When the edges of the pancake are browned, turn it over with a turner to the other side and bring it to readiness.
  • 11. Put the ready pancakes on a flat dish. At will, each pancake can be greased with melted butter.
  • 12. Serve ready pancakes on kefir with boiling water with favorite jam, honey or chocolate syrup.
