Banana Sochniki (Cottage Cheese Pastries)

Pastry with cottage cheese filling is always very tasty. Today I offer to prepare delicious sochniki from shortcrust dough with cottage cheese and banana. Golden, with a fragrant filling, they won't leave anyone indifferent. Unlike the traditional recipe, we will form closed sochniki in the form of small cakes. So that the products hold the shape well, and the filling does not flow out during baking, I fixed the edges of the cakes with a decorative braid.

  • Whole wheat flour
    320 g
  • Sour cream
    100 g
  • Butter
    100 g
  • Egg
    1 pcs
  • Sugar
    3 tbsp
  • Baking powder
    0.5 tsp
  • Salt
    1 pinch
  • Cottage cheese
    200 g
  • Banana
    1 pcs
  • Vanillin
    1 pinch


  • 1. In deep bowl connect softened butter and sugar (2 tbsp). By means of mixer whip everything to homogeneous light mass.
  • 2. Then add sour cream and 1 chicken egg to the dough.
  • 3. Mix the ingredients again with the mixer until homogeneity.
  • 4. Add a baking powder and a pinch of salt to the dough, mix.
  • 5. Add sifted high grade wheat flour into the dough.
  • 6. Knead soft elastic dough. Cover the bowl with the dough with food wrap and send it to the fridge for 30 minutes.
  • 7. Meanwhile, let’s make a filling. Peel ripe banana and mash with the fork into homogeneous puree.
  • 8. Add cottage cheese, wheat flour (1 tbsp), sugar (1 tbsp) and vanillin to the banana puree.
  • 9. Mix the filling until homogeneity.
  • 10. Roll the cooled dough into a 3 mm thick layer. Cut out round blanks of 10-12 cm diameter from dough.
  • 11. On each blank let’s put 1 tablespoon of filling.
  • 12. Fold the preparations in half, carefully pinch the edge of the dough and form a decorative braid.
  • 13. Put the preparations on the baking sheet, covered with parchment paper, in a short distance from each other. At will, the preparations may be greased with whipped yolks.
  • 14. Send sochniki with cottage cheese and banana to the oven heated to 200 degrees. Bake the products for 15-20 minutes until golden brown. Cool the ready pastries to room temperature and decorate with sugar powder.
